Sesam (hier Sesammus) hat recht hohe Werte an schwefelhaltigen Aminosäuren Cystein/Methionin, was bei pflanzlichen Proteinen recht selten ist. Und auch Tryptophan. Praktisch so wie Molkeprotein (Sesam: 1.9/3.0/1.4 vs Molke: 2.2/2.2/1.4 Cys/Met/Try). Tahin kann man sehr gut pur essen.
